Would you describe yourselves as a cookie-monster loving family? We definitely are but, in order to satisfy our sweet tooth and keep things healthier around here, we’re constantly fixing this simple recipe which allows to make two batches at the same time: one for our toddler (without chocolate) and for us – the chocoholic adults.
Chewy Almond Flour Cookies
Total time: 15-20 min
Yield: 5 large cookies or 8-10 small cookies (per batch)
Ingredients
For Toddlers
2 tbsp sugar or powdered erythritol, or stevia
scant 1/4 tsp salt
1/8 tsp baking soda
2 tbsp coconut oil
1 tsp pure vanilla extract
2-3 tbsp milk of choice, as needed
For Chocolate Lovers
1 cup finely ground almond flour
2-4 tbsp chocolate chips or sugar free chocolate chips
2 tbsp sugar or powdered erythritol, or stevia
scant 1/4 tsp salt
1/8 tsp baking soda
2 tbsp butter of choice
1 tsp pure vanilla extract
2-3 tbsp milk of choice, as needed
Instructions
Preheat oven to 325 F
Line cookie tray with parchment paper (we use the same cookie tray for both batches)
Stir dry ingredients very well
Add wet ingredients to form a dough
Shape into cookies / Place on tray – I used a measuring tablespoon to first form balls and then flatten dough on cookie tray
Bake on the center rack 10-12 minutes
Let cool an additional 10 minutes before handling, as they are very delicate at first but firm up completely once cool
