Chewy Almond Flour Cookies



Would you describe yourselves as a cookie-monster loving family? We definitely are but, in order to satisfy our sweet tooth and keep things healthier around here, we’re constantly fixing this simple recipe which allows to make two batches at the same time: one for our toddler (without chocolate) and for us – the chocoholic adults.


Chewy Almond Flour Cookies


Total time: 15-20 min

Yield: 5 large cookies or 8-10 small cookies (per batch)

Make this recipe a chocolate lover's delight by adding some chocolate chips

For Chocolate Lovers


Instructions

  1. Preheat oven to 325 F

  2. Line cookie tray with parchment paper (we use the same cookie tray for both batches)

  3. Stir dry ingredients very well

  4. Add wet ingredients to form a dough

  5. Shape into cookies / Place on tray – I used a measuring tablespoon to first form balls and then flatten dough on cookie tray

  6. Bake on the center rack 10-12 minutes

  7. Let cool an additional 10 minutes before handling, as they are very delicate at first but firm up completely once cool
