Power Outage Chicken Chili

Chicken chili (below recipe will yield about 6 servings)


· 2 cans of organic beans (your choice, but it could be black beans and pinto beans)

· 1 can of organic corn

· 2 cans of canned chicken (12.5 oz each)

· 1 pack or can of organic chopped tomatoes

· 1 pack of organic chicken stock

· 1 lemon

· 1 tablespoon of olive oil

· Salt, pepper, cumin, chili powder (your choice of spices)

· 1 bag of organic corn chips (to have on the side)


1. Drain and rinse the canned beans and corn

2. Place beans and corn in a pot

3. Drain canned chicken and add it to the pot

4. Pour in 1/2 cup of the chopped tomatoes and stir

5. Pour in 1 cup of chicken stock and stir together well (add more to achieve preferred consistency, if needed)

6. Add the juice from the squeezed lemon

7. Add olive oil, salt and other spices

8. Stir everything together

9. Heat chili mixture (if you have a portable burner or BBQ available) or serve

10. Have some chips on the side!

* You can place leftovers in a zip lock bag and store in a cooler.
