Golden, Crispy, Air Fryer Fish Nuggets

We’ve been blessed with our little foodie. Little JV is a great eater and is always ready to eat! However, sometimes “she decides” she no longer wants to eat the food she once loved… yesterday. This is when we get creative and come up with different ways of cooking that same ingredient (scroll down for recipe).


This time was fish. We were all happy around the table with our grilled, baked, or pan-seared fish until JV decided she wanted no more. And since this situation is not enough to eradicate fish from our weekly menu, we brought in a healthier version of the fish nuggets. JV loves them! Those are not only tasty but they are pretty easy to make and cook super fast in the air fryer.


Yield: 5-6 Servings (This recipe yields 2 servings for our 2-year old and 3-4 servings for adults)


Ingredients

  • 6 cod, haddock or flounder fillets (thawed if frozen)

  • 1 cup flour (whole wheat or all-purpose)

  • 1-1 ½ cups of crushed cereal

  • 1 egg, beaten

  • ¼ milk of choice

  • ½ teaspoon of garlic powder

  • 1-1 ½ tablespoons of olive oil

  • Salt & pepper to taste

Instructions (We use this air fryer)

  1. Grease the cooking basket with olive oil

  2. Cut the fish into nuggets (approximately 1 inch by 1 inch)

  3. Combine the egg and the milk in a bowl

  4. In three separate bowls set aside the flour, milk and egg mixture, and crushed cereal

  5. Place each piece of fish into the flour, then the milk and egg mixture, and then press the fish firmly into the crushed cereal

  6. Shake off any excess crushed cereal

  7. Add the fish nuggets to the cooking basket

  8. Drizzle some more olive oil on top of the nuggets and place basket in the air fryer

  9. Set the air fryer to 350ᴼF

  10. Cook for 8-10 minutes

Notes:

- We have the Cuisinart AirFryer Toaster Oven and this one doesn’t require pre-heating.

- I also find that this air fryer heats up (and cooks faster) than other air fryers so you might need to increase the temperature (up to 390ᴼ - 400ᴼF) depending on the model you have.
